Gärungsnebenprodukte sind chemische Verbindungen, die während der alkoholischen Gärung zusätzlich zu Ethanol und Kohlendioxid entstehen und maßgeblich das Aroma- und Geschmacksprofil eines Bieres prägen. Zu den wichtigsten Vertretern zählen höhere Alkohole, sowohl aliphatische wie n-Propanol und i-Butanol als auch aromatische wie 2-Phenylethanol oder Tyrosol, die je nach Konzentration würzige bis lösungsmittelartige Noten beisteuern können. Ester wie Ethylacetat oder Phenylacetat sorgen hingegen für fruchtige und blumige Aromen. Carbonylverbindungen, darunter Aldehyde wie Acetaldehyd oder Propanal sowie Ketone wie Aceton und Acetoin, können frische, grüne oder auch buttrige Eindrücke hervorrufen. Schwefelverbindungen wie Schwefelwasserstoff oder Methylmercaptan fallen oft durch unerwünschte, schweflige Noten auf, während organische Säuren wie Essigsäure und Milchsäure zur Säurestruktur beitragen. Durch gezielte Steuerung von Gärführung, Hefewahl und Reifung lassen sich diese Nebenprodukte beeinflussen und damit Qualität und Charakter des Bieres optimieren.
