Stout

Stout, bekannt als tiefschwarzes, obergäriges Schankbier aus England, wird zunehmend auch in Deutschland und Belgien hergestellt. Es hat 3-4,5% Alkohol, eine cremige Schaumkrone und besteht hauptsächlich aus stark gerösteter unvermälzter sowie gemälzter Gerste. Imperial-Stout aus Russland enthält bis zu 10% Alkohol, manchmal fermentiert mit Weinhefen.

Stout ist heute vor Allem aus England bekannt, wird aber heute auch mehr und mehr in Deutschland und Belgien gebraut. Es handelt sich um ein zumeist tiefschwarzes, obergäriges Schankbier mit einem Alkoholgehalt von 3 % bis 4,5 % und einer ausgeprägten, cremefarbenen Schaumkrone. Es wird mit besonders stark gerösteter unvermälzter Gerste (10 %) und mit Gerstenmalz (90 %) gebraut. Als zusätzliches Malz wird häufig Karamelmalz verwendet.

Ursprünglich wurde Stout in England gebraut. Vor dort wurde Stout mit einem höheren Alkoholgehalt nach Skandinavien verschifft. Auch in Russland wird Stout unter dem Namen Imperial-Stout hergestellt. Dort wird das Stout stärker gebraut und hat einen Alkoholgehalt von 7 Vol.-% bis 10 Vol.-%. Teilweise werden dort auch Weinhefen und keine Bierhefen verwendet, da diese einen höheren Alkoholgehalt erzeugen können.
