Caramelmalz ist ein spezielles Malz, das in der Bierherstellung eingesetzt wird, um Farbe, Geschmack und Mundgefühl gezielt zu beeinflussen. Es wird meist aus Gerste, seltener auch aus Weizen hergestellt und ist in unterschiedlichen Farbgraden erhältlich – von hellen bis hin zu sehr dunklen Varianten.

Durch seine Herstellung entwickelt Caramelmalz süßliche, karamellige und leicht röstige Aromen, die dem Bier mehr Tiefe und Vollmundigkeit verleihen. Zudem kann es die Schaumstabilität verbessern und sorgt für eine intensivere Farbgebung. Es findet in vielen Bierstilen Verwendung, insbesondere in Lagerbieren, Pilsenern und malzbetonten Bieren, um das Geschmacksprofil abzurunden.
