Eine Lauge ist eine Flüssigkeit mit einem pH-Wert über 7 und gehört damit zu den basischen Lösungen. Sie entsteht in der Regel durch das Lösen von Basen in Wasser und kann je nach Konzentration unterschiedlich stark alkalisch wirken. In der Brau- und Lebensmitteltechnik spielt die Lauge unter anderem bei Reinigungs- und Desinfektionsprozessen eine wichtige Rolle.
