Alpha-Säuren sind natürliche Bitterstoffe aus den Lupulindrüsen des Hopfens und spielen eine zentrale Rolle beim Bierbrauen. Sie sind maßgeblich für die Bittere des Bieres verantwortlich und tragen zudem zur Haltbarkeit bei. Zu den wichtigsten Alpha-Säuren zählen Humulon, Cohumulon und Adhumulon. Während des Würzekochens werden sie in sogenannte Iso-Alpha-Säuren umgewandelt. Erst in dieser Form entfalten sie ihre typische, im Bier wahrnehmbare Bittere.
